The logic behind this may seem backwards, but the draft past the food is what drys the food not so much the heat. This design is said to work better than updraft dehydrators on cloudy days, and I found no complaints of burning as is the case of the updaft dehydrators.
I hope to build this soon as my garden is beginning to produce, and I will soon be faced with an over abundance of fresh vegetables. Ill keep this post updated.
